Today was the first day of the Nutrition Challenge! The first day isn’t that bad. I’ve done it before so I know what to expect. I think the hardest part about Paleo is lunch. You have to get your meals prepared in advance during the weekends!
For lunch I had kale chips and a chuck roast. I also had a cup of black tea.
For dinner I had a pork shoulder in the crock pot with bibb lettuce, tomatoes, and avocado. I won’t post the recipe because I didn’t particularly care for it. I think I didn’t like it because the seasonings included cinnamon and I didn’t really like the sweetness.
